Maltitol, also known as E965 or amalti syrup, belongs to the class of organic compounds known as fatty acyl glycosides of mono- and disaccharides. Fatty acyl glycosides of mono- and disaccharides are compounds composed of a mono- or disaccharide moiety linked to one hydroxyl group of a fatty alcohol or of a phosphorylated alcohol (phosphoprenols), a hydroxy fatty acid or to one carboxyl group of a fatty acid (ester linkage) or to an amino alcohol. Maltitol exists as a solid, soluble (in water), and a very weakly acidic compound (based on its pKa). Maltitol has been detected in multiple biofluids, such as blood and urine. Within the cell, maltitol is primarily located in the cytoplasm. Maltitol can be biosynthesized from alpha-D-glucose and D-glucitol.

Maltitol is an alpha-D-glucoside consisting of D-glucitol having an alpha-D-glucosyl residue attached at the 4-position. Used as a sugar substitute. It has a role as a metabolite, a laxative and a sweetening agent. It derives from an alpha-D-glucose and a D-glucitol.
