Zeta-cyclodextrin is an oligosaccharide that is composed of six glucose monomers. It has a molecular weight of about 7,000 daltons and a cyclic structure. Zeta-cyclodextrin is isolated from corn starch by enzymatic hydrolysis with alpha-amylase and subsequent isolation using column chromatography. The x-ray analysis of zeta-cyclodextrin reveals that the molecule has a ring-shaped structure with three hydroxyl groups on each side of the ring. Zeta-cyclodextrin has been used in the synthesis of antihypertensive drugs, antibiotics, pesticides, and other pharmaceuticals.
